To be honest, I am not a morning person and don't quite function until I have a coffee in my system and some food in my belly - anyone else with me?
Breakfast is one of the most important meals of the day. As the name implies, you are literally "breaking" the "fast" from your sleep. It provides you with the fuel to keep you going through the day. In fact, eating breakfast regularly can improve memory and concentration levels making us more productive in the classroom or at work!
I often find I lack time in the morning or fall into the same breakfast foods...and I know I'm not along when it comes to these issues!
One tip I find helpful to overcome the "boring, pressed-for-time, breakfast cycle" is to meal prep my breakfasts in advance. During my dietetic internship, I loved making oatmeal cups, muffins, or breakfast cookies (especially the ones pictured here). It was so simple and easy to throw a couple cookies in a container along with some "grab and go" fruit to make sure I had enough fuel in the tank to keep me trucking through out the day.
P.S. These cookies are vegan and can easily be made gluten free using gluten free flour and oats. Enjoy! :)
