Blueberry Compote and Goat Cheese Flatbread

This recipe was inspired by Midwest Foodie.

Blueberry compote and goat cheese flatbread topped with mint leaves and a drizzle of honey placed on a piece of parchment paper.

Uhm...YUM! Hello flavourful appetizer - where have you been my whole life?!

I recently saw this recipe off of Pinterest from the Midwest Foodie, and just wow! So, I thought I'd give it a try myself with my own twist of a blueberry compote for more tang.

Blueberry compote in a small silver saucepan. The blueberry compote ingredients include fresh Ontario blueberries, lemon juice, lemon zest, and sugar.
The "before" pic of the blueberry compote.

So what makes it more tangy?! Lemons, of course. Nothing beats a good zest of the lemon to elevate your dish to the next level.

This recipe truly is a nice balance of sweet and savoury between the blueberries, orange marmalade, mint, honey, and goat cheese!

Hopefully I will have a vegan version soon so that my plant-based buddies can enjoy the delicious goodness of this recipe too! I am currently testing out some cashew-based "cheese" recipes that will be just as good (if not better) than the original recipe. So stay tuned my plant-based friends - I am thinking about you too.
