It is hard to believe that Christmas is just around the corner! While you may be busy with placing the finishing touches on wrapping gifts or planning out your delicious Christmas dinner feast - you may be wondering, "What the heck am I going to feed my family on Christmas morning???"

This simple recipe is a Christmas morning crowd pleaser that perfectly marries the flavours of a gingerbread cookie and the fluffy and light taste of a delicious pancake. Dress these pancakes up by adding some maple syrup, powdered sugar, and festive holiday sprinkles.


BONUS: To ease the stress that can sometimes come with the holidays, make these pancakes ahead of time, and freeze them in your freezer until ready to eat. Quickly dethaw them by popping them in your toaster. Alternatively, prep the wet and dry ingredients the night before (make sure the wet ingredients go in the fridge!), and then combine them and cook the morning of.
