The story behind the recipe:
Last summer while out for dinner, my boyfriend ordered this pasta dish...as soon as they brought it over, I was swooning (probably because it had quinoa in it and I am a sucker for anything with quinoa). Unfortunately, as much as it looked so delicious, it had garlic and onion - foods that I have an intolerance to.
From that moment, we were determined to remake the dish - minus the garlic and onion - but with just as much flavour and bite.
Happy to report that I think we achieved flavour town status.
