Raspberry Lemon Cashew "Cheesecake" Squares

We are on a berry roll! But who doesn't love this time of year when berries become so vibrant, fresh, and delicious?!


This past weekend, my SO and I did a little cross-Ontario camping tour stopping in places like Killarney, Manitoulin Island, Tobermory, and Flowerpot Island (see pictures of the amazing views below). It's amazing how much Ontario has to offer! We had such an awesome time taking in the views and getting our hike on.


And I don't know if it is just the foodie in me, but I always think it is so magical to find wild berries like raspberries along hiking trails.

In fact, of the many varieties of raspberries that are grown, there is a Killarney type. The Killarney raspberry is considered to be the most robust and hardiest of raspberries as they are resistant to diseases and grow in cooler climates.


Other types of raspberries that are grown in Ontario include Boyne, Festival, Titan, Nova, and Reveille. Although raspberries are known for their bright red colour, they can also be purple, black, and yellow. Examples of purple raspberries that are grown in Ontario include Royalty and Brandy Wine.


Regardless of the colour, raspberries are my favourite berry and I could easily eat a whole carton of them by myself.


Put these berries in a dessert and PHEW NELLY I'm all over it! Haha.


These delicious squares perfectly pair raspberries and lemon to create a refreshing, summer snack. If you aren't into square-shaped foods, the filling can be easily made into popsicles to cool you down on those hot summer days.
