Simple Sweet Potato and Black Bean Chilli

Nothing says comfort food quite like a bowl of chilli on a cold January day! This chilli recipe is by far my favourite. Why?

  1. One pot plant-based meal = no stress clean up.

  2. Simple ingredients, like sweet potato, canned black beans, and salsa, that packs a flavourful punch.

  3. Make once. Eat twice! Leftovers can easily be turned into chilli for lunch or wrapped in a whole wheat tortilla to make for a fun burrito night (just add all your favourite burrito toppings).

Add some homemade tortilla chips and top with avocado slices and purple onion, and your comfort food heart will be singing!
