Vegan Pumpkin Muffins with Walnut Crumble Topping

Nine pumpkin muffins sit on a grey countertop with a blue and white plaid tea towel. Crumbs from the pumpkin muffins' walnut crumble topping are sprinkled around the countertop.

We may be slowly moving past the "Fall vibes" and everything pumpkin to welcome the holiday season, but that isn't stopping me from using up the last of my canned pumpkin products!

In the bottom left of the image is a close-up shot of a vegan pumpkin muffin with walnut crumble topping. In the background is the blue and whit tea towel with several muffins laying on top of the towel.

This recipe works best if you have leftover pumpkin puree or pumpkin pie filling and you don't quite know what to do with them, (anyone else find themselves in these situations??).

Axe the food waste by making pumpkin muffins your family will enjoy as a yummy snack, sweet breakfast, or post-dinner treat.
